Nan Gyi Thoke is a noodle salad mixed in a chicken gravy with many other ingredients which is eaten as a breakfast, lunch or a snack. Nan Gyi simply refers to the thick round noodle and Thoke literally means mixed through. In Myanmar, Noodles come in different sizes and shape like round or flat. You can request small, medium or big size of noodles. Nan Gyi Thoke is commonly served with topping like crispy fritter and boiled egg.
Small bowl of soup is usually accompanied by the Noodle when you order Noodle Salad in Myanmar. Of course it's a complementary and you can ask for extra soup in case you want more. That is one of the most interesting culture foreigner may find or perhaps strange when visiting Myanmar. Be sure to try this wonderful Noodle Salad.
Ingredients (servings 2-3)
For Chicken gravy
150g chopped chicken breast or boiled one shredded it to small piece
1/2 head finely chopped onion
2 cloves crushed garlic
Little grated ginger
Little turmeric powder
1 teaspoon of chili pepper
3 tablespoons of oil
1 teaspoon of salt or more
200 ml (1cup) of water
Garnishes
300g of cooked round rice Noodle or Udon Noodle
Garlic oil
Fish sauce
Chili powder
Chickpea powder or (substitute with Kinako powder in Japan)
A handful of boiled bean sprouts
A handful of shredded cabbage
Sliced onion
Little coriander and spring onion
Lime or lemon
1. Heat the oil, add turmeric powder and then add onion and garlic. Stir it until becoming fragrant and add the chicken. |
2. Add the chili powder, stir it for a while, and add water. Season with salt and simmer it in a low heat until the oil return. |
