Vegetables Curry


Vegetables curry is an Indian popular curry which is easy and quick to prepare for one dish meal. Importantly it's very healthy, light and delicious. A rich taste of curry with the fragrant of spices, creamy taste of coconut milk, and tender vegetables is a healthy comfort food in cold winter. Serve with steamed  rice or Naan. 

 Ingredients (2 servings)

100g string bean
200g cauliflower
1 potato
1/2 carrot
3 mushrooms
1/2 chopped onion
3 cloves crush garlic
1 tablespoon of grated ginger
1 tablespoon of curry powder
1 teaspoon of chili powder
1 teaspoon of cumin seed
 2 tablespoons of cooking oil
1 cup (200ml) of water
1 cup of coconut milk or (soy-milk or cream)
1 tablespoon of chopped coriander
1 teaspoon of salt

Ingredients

1. Wash vegetables well and cut it to bite size.
2. Heat oil, add cumin seed, when it becomes crack add chopped onion and stir fry until fragrant. Then add curry powder, chili powder and grated ginger.
3. Add a little water and then follow by chopped vegetables.

4. Add the remaining water and coconut milk, season with salt, lid on and simmer in a low heat 10 to 15 minutes or until the vegetables become soft as your taste. Add chopped coriander and stir well.

5. Adjust the taste and the curry is ready to serve.
