Vegetables curry is an Indian popular curry which is easy and quick to prepare for one dish meal. Importantly it's very healthy, light and delicious. A rich taste of curry with the fragrant of spices, creamy taste of coconut milk, and tender vegetables is a healthy comfort food in cold winter. Serve with steamed rice or Naan.
Ingredients (2 servings)
100g string bean
200g cauliflower
1 potato
1/2 carrot
3 mushrooms
1/2 chopped onion
3 cloves crush garlic
1 tablespoon of grated ginger
1 tablespoon of curry powder
1 teaspoon of chili powder
1 teaspoon of cumin seed
2 tablespoons of cooking oil
1 cup (200ml) of water
1 cup of coconut milk or (soy-milk or cream)
1 tablespoon of chopped coriander
1 teaspoon of salt
Ingredients |
1. Wash vegetables well and cut it to bite size. |
2. Heat oil, add cumin seed, when it becomes crack add chopped onion and stir fry until fragrant. Then add curry powder, chili powder and grated ginger. |
3. Add a little water and then follow by chopped vegetables. |
4. Add the remaining water and coconut milk, season with salt, lid on and simmer in a low heat 10 to 15 minutes or until the vegetables become soft as your taste. Add chopped coriander and stir well. |
5. Adjust the taste and the curry is ready to serve. |
