If you're like me then every time you see granola you want it!
What I don't want is the high cost of purchasing granola and the fact that it's just not as fresh or as cost effective as making it yourself.
When the wonderful people at Zulka Morena® Pure Cane Sugar reached out to me for recipe development my first thought was, why not granola?
I wanted a granola that was full of coconut, cranberries and loads of pecans.
It's a really simple process, you mix all the ingredients together in a bowl, minus the dried fruit and bake for about 20-25 minutes, stirring every 5 minutes to brown evenly.
Allow the granola to cool for about 30 minutes, then stir in the dried fruit.
Granola is very forgiving so add as much nuts and dried fruit as your heart desires.
I've decided that I want to become a granola making mama after this batch turned out perfectly.
My family decided that my granola taste way better than store bought, and all the pecans just made it even more delicious.

Pecan Coconut Granola
Prep Time: 5 minutes
Cook Time: 25 minutes
Total Time: 30 minutes
Servings: 6-8
Ingredients:
3 cups oats
1/4 cup Zulka Morena® Pure Cane Sugar
1/4 cup honey
1 cup grated coconut
1/2 cup coconut oil
1 tablespoon molasses
1 teaspoon cinnamon
1 teaspoon vanilla
2 cups pecans, diced
2 cups dried cranberries
Directions:
Preheat oven to 325 degrees.
In a large bowl, add oats, honey, vanilla, molasses, pecans, coconut oil, grated coconut, sugar, and cinnamon, mix well.
Place granola on cookie sheet and bake for about 25 minutes, stirring every 5 minutes to brown evenly.
Remove granola from oven and allow to cool 30 minutes.
Fold in dried cranberries, mix well, and store in an airtight container.
