Potato salad is a Japanese family all time favorite dishes as similar to westerners mashed potato. Japanese potato salad add some vegetables like carrot, cucumber and onion or sometime bacon to the liking. I prefer my potato salad simple and less creamy. Adjust the taste to your liking.
Ingredients ( 2 servings)
1 Potato (150g)
2 cm Carrot
1 Boiled egg
1/4 Onion
1/2 Cucumber
2 Tablespoon Mayonnaise
1/2 Teaspoon Salt
1/2 Teaspoon Pepper
2 Tablespoon Milk
- Boil the potato and carrot until becoming soft.
- Mash them roughly with folk.
- Slice onion finely, soak in water for a while, and drain the water well.
- Slice cucumber finely, sprinkle some salt and squeeze out the excess water.
- Cut boiled egg to small pieces.
- Mix all ingredients well and season with Mayonnaise, salt and pepper.
- Serve hot or chilled.
