Simple green salad but yet very fresh and healthy with balsamic vinegar dressing. I prefer my salad with light soy sauce or balsamic vinegar rather than heavy type mayonnaise. This salad can go with any kind of dressing as liking. Here is my easy homemade dressing.
Ingredients ( 2 servings)
1/4 head broccoli
5 spears asparagus
1/4 pound green beans
1 tomato
1/4 head lettuce
Dressing
50 ml balsamic vinegar
2 Tbsp olive oil
1 Tsp oregano
1 Tsp sugar (optional)
Little salt

- Cut lettuce to half, green bean, broccoli and asparagus to 2cm, wash and drain well.
- Boil green bean, broccoli, and asparagus in hot water for one minute each and immediately put it in ice water to cool down.
- Drain well and chill vegetables in the fridge for crunchiness.
- Mix dressing ingredients well and adjust the taste.
- Prepare the vegetables on a plate, add cut tomato, pour the dressing and serve immediately.
- Keep remain dressing in the fridge,it lasts for 2 weeks.
