If you are a salad lover and like nice appearance salad this salad is a must try. Combination of tuna and carrot match very well and give a rich taste. This salad simply can serve as a starter or as a main as a light lunch.
Ingredients (2 servings)
2 carrots
1 (80g) can tuna
2 Tbsp mayonnaise
1 Tsp olive oil
1 pack baby leaves
Walnut as liking
1/2 Tsp salt
A dash of pepper
Little parsley for garnish

Ribbon carrot and how I prepare to chill my vegetables |
- Peel the carrots with vegetable peeler, then continued peeling carrot to long and thing like ribbon.
- Sprinkle salt and mix thoroughly by hand, set aside for 10 minutes to soften the carrot, remove excess water.
- Wash baby leaves chill in the fridge.
- Drain tuna, mix with mayonnaise, olive oil and pepper.
- Arrange ribbon carrot and baby leaves on a plate, pour over the tuna mixed, sprinkle with walnut and chopped parsley. Serve immediately.
