Amazake ( Pureed type) |
Amazake is a Japanese traditional sweet non-alcohol drink which is served as a snack or dessert. Usually popular in winter, but nowadays it's also available in summer. Amazake is made from Sake Lees which is left over from making Japanese Sake (Pureed type). There are also another types of Amazake which is made from Koji - Malted rice (Transparent with rice type). It is said that Amazake contains many vitamins and nutrition. In winter, there are ready made canned Amazake available at the supermarket and also vendors at a temple and shrine. When you are in Japan be sure to try it.
The taste is naturally sweet and very nice aromatic of sweet sake. It tastes very similar to Korean Makgeolli which is a rice alcoholic beverage.
Ingredients ( servings 2)
100g Sake Kasu (sake lees)
500ml water
2 tablespoons of sugar or adjust to taste
A little grated fresh ginger (optional)
Sake Lees or Sake Kasu ( Can be used for soup as well) |
1. Dissolve the Sake Lees in a stainer with half of the water, add remaining water and bring to boil. |
2. Simmer it in a low heat for 10 minutes. Add sugar and adjust to taste. |
Add grated ginger, stir well and serve hot. |
